MILAN – The Coffee Knowledge Hub this month is featuring new articles. This week, they start with a new article from Dr. Anja Rahn- the article, Economics of Coffee Innovation: Part 1: The Paradox – is the first of a 3 part series analysing the economics of coffee innovation. In part 1, we learn about the benefits of innovation and how value derived from innovation is distributed inequitably across the supply chain.
Next week they have an article on per capita coffee consumption, how do coffee professionals’ annual coffee consumption compare to their respective national averages.
Finally they have an article on milk proteins in coffee. Understanding these proteins is essential for understanding dairy milks foaming abilities.

New Course on The Coffee Knowledge Hub: Water for Coffee with Samo Smrke
As Lance Hedrick says, learn about this topic from the person who wrote the book. This 3 part course covers the theory of water’s interaction with coffee for both sensory quality and machine maintenance.
There is an optional kit for water testing and creation as well as some sample coffee to evaluate different water qualities.
