For many of us, January can be tough. The holidays have come and gone, the temperatures continue to drop, and our New Year’s resolutions have us yearning to do more while spending less.

But I recently learned there is another holiday worth celebrating in January even after the tree comes down – National Popcorn Day on January 19th! And perfectly enough, it matches up with one of my favorite ways to spend a cold winter night: a movie night at home. All you need is good company, your movie of choice and a tasty snack.

That’s where this popcorn recipe comes in. To make your movie night even more exciting (and celebrate National Popcorn Day!), give your standard popcorn an upgrade by creating this deliciously addictive Coffee Caramel Crunch Popcorn. Made with Seattle’s Best Coffee for a pop of smooth coffee flavor, the sweetness of the caramel coupled with the saltiness of the popcorn makes it a snack you won’t be able to put down.

I used Seattle’s Best Coffee House Blend (it’s my favorite!), but you could use any of the smooth Seattle’s Best Coffee blends to create your tasty movie night treat.

Simply prep your caramel sauce using brewed Seattle’s Best Coffee –
Pour over popped popcorn –

And dig in!

Coffee Caramel Crunch Popcorn

Ingredients:

8 cups popped popcorn
2 cups brown sugar
6 tablespoons butter
2 tablespoons light corn syrup
1 cup brewed Seattle’s Best Coffee House Blend
Directions:

Line a 9×13 casserole dish or deep baking sheet with parchment or wax paper. Spread popcorn evenly on baking sheet.
In a medium saucepan, combine brown sugar, butter, light corn syrup and brewed coffee. While stirring constantly with wooden spoon, heat over medium-high until temperature reaches 260 degrees F.
Immediately remove from heat and pour over popcorn. Stir to coat. Allow to cool before eating. Enjoy!
