Coffee and beyond: HostMilano looks to the coffee shop of the future

MILAN, Italy – What will tomorrow’s hospitality professional be like? Someone who keeps a close eye on the evolution tastes and lifestyles, understanding and even anticipating what consumers will want in bars, restaurants and hotels.

And the events at the SIC area of HostMilano will present the very latest trends and provide a business support service.

Coffee, a cornerstone of all catering concerns, needs to be understood in terms of the various stages involved in its production.

An overview of this kind will be provided by Caffè e…, an event put together by Altoga – the Lombardy Association of Coffee Roasters, Importers and Food Wholesalers and FIPE – the Italian Federation of Public Establishments together with I.C.A. Italian Coffee Association.

It will be a full immersion into the world of coffee from the green bean through the various roasting and grinding processes to the final tasting of the blend. In an adjoining area, a group of chefs will offer show-cooking presentations that address the very current theme of coffee in cooking.

In its own spaces FIPE will present its Host 2017 programme of master classes, training sessions, participation by students from hotel training schools, and an appreciation of professional skills and experience. And last but not least, the fundamental subject of innovation will be tackled.

Competitions and championships are always an opportunity to pit your skills against others and to learn from those at the top of their game.

The 5th Italian Café Grand Prix organised by AICAF, the Italian Academy of Master Coffee Makers, will be held on 21 and 22 October and the finals will be supported by Altoga. Here the focus will be not just on professionalism, but also on Italian-made products.

In fact the recipes presented to the sensorial judges who will name the best barista must include at least one Italian food or wine ingredient.

And 4.0 baristas will surely have plenty to get excited about from the programme devised by Mixer with Planet One, which at HostMilano will reveal all about the magic of mixability with professional workshops and food shows, examining natural herbs and medicinal plants, and presenting new combination and food pairing techniques.

In this way it will be shown how ancient ingredients can create and transform classic flavours into something unusual and totally innovative.

Master mixologists and chefs will turn to tradition to explain and teach professionals operating in the sector the properties of natural herbs, their benefits and the ways they can be used.
