Broccoli coffee: Here is how scientists create new way to eat more greens

Powdered vegetables could be the future of superfoods. A powdered broccoli product has been developed in collaboration with the CSIRO and Hort Innovations, which sees one serve of the vegetable contained in every two tablespoons of the powder.

And thanks to its powdered form, the broccoli is best served mixed into other foods or via a liquid—in other words, broccoli coffee is happening.

Trialled in Melbourne café, Common Folk, who served broccoli lattes to “mixed reviews”, the powder is no doubt going to become something of an in-demand product if and when it hits shelves, because let’s be honest, if we could get our broccoli serve over and done with via a smoothie, we’re interested.

“With a rising trend in healthy eating across the board, Australian growers are always looking at ways to diversify their products and cut waste while meeting consumer demand,” Hort Innovation chief executive John Lloyd said in a press release.

“Research shows the average Australian is still not eating the recommended daily intake of vegetables a day, and options such as broccoli powder will help address this.”

But perhaps the best part about the powder? It’s made from imperfect broccoli which would otherwise go to waste—a win for waste and your wellbeing.
