BONDI BEACH, Sydney, Australia – Will & Co was formed by a group of lifelong coffee loving friends, who together have over 50 years of coffee and café experience and a shared ambition to create a unique coffee culture in Australia.
Located in the heart of Bondi Beach, Will & Co’s innovative micro roastery aims to be a hybrid space, predominantly used for training and education purposes, coffee roasting, retail and a sweet spot for the local Bondi community – a place to roast coffee, explore the flavour profiles of different coffee origins and experiment with alternative brewing methods.

“We’ve been lucky to have been supplying coffee to great venues around the country for over six years and in that time we’ve seen the market change dramatically – coffee is an extremely innovative and dynamic industry. Every week there seems to be an interesting new café opening – the standard of coffee and food in café’s is the best it’s ever been and a large majority of people are experimenting with alternative brew’s outside of the traditional milk based coffee.
We are a country of coffee snobs which is fantastic as it means we are well educated, know what a good coffee is and have an opinion on favourite brands and blends. So with all these changes we decided now is the optimum time to open a concept store, a place where we can continue to work closely with our clients to enhance the coffee experience in their venues and further educate the broader community.”
The Will & Co concept space will play host to an impressive custom Probat coffee roaster.
Celebrating the theatre of coffee, the Probat Drum roaster uses a slower, more controlled method of roasting and will be exclusively used to roast the world’s most exciting coffee beans.
The space will host a variety of events, including; latte art smack downs, barista competitions and educational talks with the aim to further educate the local community on coffee culture and the science of coffee. Coffee enthusiasts will have the opportunity to take part in home barista courses and will be able to purchase freshly roasted Will & Co coffee beans and a range of specialty goods, such as cold drip equipment and ceramics.
In keeping in line with the brand’s ethos of supporting the local community, the Will & Co concept store will make a conscious move away from single serve plastics, serving all coffee in reusable, ceramic cups. The space features a milk juggler, which uses milk bladders instead of cartons to minimise milk waste and all used coffee grounds will be recycled back to the local community for use in compost beds and gardens.
Synonymous with coastal cool, Bondi Beach is the cultural home of Will & Co. Custom, artistic murals feature throughout the space, designed and installed by long-standing friend of the brand, WA based Illustrator Chris Nixon. The Will & Co concept store has been designed by leading Sydney Architects, Jeremy.

“The design collaboration explores our fascination and admiration for Will & Co’s entrepreneurial DNA. We love the space the brand inhabits; equal parts hustling artist, dogtown skater and creative innovator. Our vision for Will & Co HQ has a familiarity yet there is a sense of the new and unexpected. Steel joinery sets a backdrop for resin coffee counters and exposed painted brickwork. A Donald Judd inspired pivoting partition hovers whilst the coffee grinder and bean sacks sit centrally with pride of place. The tenancy is unapologetic, direct and charismatic – like Will & Co.”
The Will & Co concept store and boutique roastery is now open on the corner of Gould Street and Beach Road, Bondi Beach.
