FIRENZE – Evo2 multiplies the aromas A “classic” ice-cream with coffee with fior di latte ice cream and the savour of dark chocolate with hazelnuts, one with spiced aromas and chocolate or one with exquisite citric acid gusto and a touch of bergamot.
The combination of coffee and ice cream will be playing the leading role in the fifth appointment with “Io bevo caffè di qualità” that takes place on July 29th in Florence near Piansa Coffee Corner in Ripoli Street 207 starting from 15. Coffee expert Andrej Godina and Coffee Lover Francesco Sanapo are the creators of this event and will be in charge of directing all the work.
Like in every edition, Dalla Corte is sponsor and will be there with its machines: a evo2 Blackboard with 3 groups and a dc two grinder on demand with two hoppers.
The espressos and pour-over will have two possible monorigins: either an Indian Plantation “AA” Bababudan or an Ethiopian traceable Yrgacheffe gr.1. And why are the three profiles of taste being highlighted? Because this appointment is a new occasion to verify the extreme precision of a Dalla Corte machine when regulating the temperature of each group and the thermal stability that characterizes it.
Whereas the Indian cup is constant, with its pasty body and its predominant taste of dark chocolate, the one from Ethiopia is able to gather two profiles.
The espresso obtained from the group with the highest temperature will intensify the body and have a more bitter taste, with spicy and dark chocolate touches.
When extracted at a lower temperature, bitterness will decrease, leaving space for an exquisite acidity with the scent of bergamot, pink grapefruit and cranberries.
The differences between taking it in its pureness or together with an ice cream, in an intense and truly pleasant sensorial mix.
