MILAN, Italy – “The advice that I can offer is first of all to become informed. It all boils down to knowledge. Therefore, a coffee bar operator who is starting out in the business should learn first-hand and understand, first of all, the quality of the incoming water available at the inlet.

By quality I mean the composition of the water. Taking this as a starting point, the user must have very clear objectives. They must know the goals that they want to achieve through using a water treatment system.

This way, after having consulted specialised companies that can guide them towards the various available solutions, the user can make an informed choice.

In essence, three systems are most commonly available on the market: softening systems, various cartridge systems and reverse osmosis. None of these solutions is better than the others a priori; a cost/benefit analysis is needed, which can be performed only on the basis of a clear knowledge of the treatment needs and of the applications for which the treatment system is intended, i.e. the objectives to be met.

Therefore, my advice is to first become informed, without underestimating the importance of water quality (which is paramount if we strive to supply a quality product) and then to seek the advice of specialised companies.”
