Milan, Italy – Gruppo Cimbali, an Italian company that is among the world’s leading manufacturers of professional espresso machines, launched the Coffee Technician wheel at the Coffee Technicians Guild Summit held in Italy at the end of November.
This tool was presented in a world première by Edgardo Ferrero, Group Services director, in the “Holistic view on tech expertise – from bean to machine” lecture, the closing keynote address of the first day of the European Coffee Technicians Guild Summit.

Gruppo Cimbali participated in the event with its equipment, fully-automatic S60, Groundbreaker grinder, Traditional machines: E98 Up and Casadio 1 group and also conducted two trouble-shooting sessions with the goal of sharing expertise in order to grow the industry and highlight the work of technicians and their contribution to the whole industry.

The characteristics

The wheel gives us a better understanding of the variables that affect a cup of espresso coffee; it can be used as a compass that guides technicians in choosing the best settings for achieving certain sensory characteristics, extracting and enhancing the coffee’s sensory components. Each area indicates a parameter that needs to be addressed: starting from the choice of coffee to the last step of the brewing process, when water and coffee are dispensed from the coffee machine as espresso.

This product is the result of Gruppo Cimbali’s long experience in the technical field in Italy and abroad around the world and it was an achievement of teamwork that involved the Mumac Academy coffee experts as weel.

Mumac Academy is the Cimbali Group’s coffee machine academy, a training, promotion and research centre.

The “Coffee Technician wheel” is a guide that successfully summarizes all the factors that affect a cup, demonstrating the complexity and major significance of the work of technicians.
