Gruppo Gimoka to showcase Vacuum Coffee Bean Hopper at Venditalia

MILAN – At Venditalia 2018, Gruppo Gimoka will present a technological solution designed to constantly guarantee coffee quality, thanks to a system that creates a vacuum inside the coffee bean hopper.

Vacuum: a guarantee of high quality

Creating and maintaining vacuum conditions for coffee ensures its preservation at a low moisture level with almost no oxygen.

Therefore, oxidation of coffee is avoided as biological and enzymatic activities are considerably slowed down by the absence of air. Moreover, rancid coffee is avoided as the humidity does not come into contact with the coffee beans.

The advantages for the Operator and end users

This innovative solution is successfully applied in the automatic vending machine as well as the Ho.Re.Ca sectors. In the Vending Industry, the system developed by Gruppo Gimoka can be installed also in the vending machines already present on the installed park. This distinctive characteristic increases the performance of the machines, while leveraging the investment that has already been made.

Other advantages offered by this innovation in the Vending Industry are:

  • facilitation of the loader operations thanks to the easily open lid of coffee hopper;
  • reduction of loading frequency as the time in which the coffee remains in optimum conditions is extended;
  • non-formation of coffee lumps, typical result of the vacuum process.

The system also offers the following operational features:

  • The system that has been designed uses components created ad hoc to eliminate mechanical stress, which can compromise the useful life of the dispenser motor.
  • As it is not necessary to use stirrers (mechanical parts which wear easily) to avoid the creation of lumps, the life time of the gear-motor is not jeopardised.

The technological solutions developed in the application of the coffee bean hopper with the Gruppo Gimoka vacuum system are protected by 2 patents – patent pending.

GM1: the all-in-one solution designed for out-of-home use

GM1 is an ergonomic, refined, extremely flexible “all-in-one” solution that brews a wide range of high quality drinks. The machine, which can operate simultaneously with various single-portion systems, is an excellent solution for the professional market, also because it allows complete management of the beverage dispensed. The Group offers as well interesting financing solutions.

GM 1 all-in-one.  One machine, countless drinks

GM 1 combines the features of various individual drink machines as thanks to a patented solution it delivers a wide range of drinks, enhancing their specific sensory profiles. The brewing unit can accommodate two types of capsules: for espresso and soluble drinks, requiring high pressures, the capsule-holder accommodates the proprietary multi-beverage capsule. Thus, you can prepare an endless menu of drinks. For drip coffee and leaf teas, requiring low brewing pressures, the K-cup* capsule-holder is used.

Beverage quality and flexibility: a perfect blend

The patented GM 1 system boasts uncompromising technology: when the capsule holder is inserted, the machine immediately recognises the appropriate brewing process required for the type of drink to be prepared. GM1 is also able to activate the brewing process that is most suited to the type of drink you wish to obtain. In fact, each choice can be customised in terms of dosage, temperature, pressure and brewing cycle to maximise the drink that is brewed and the organoleptic characteristics of the ingredients are respected. Pre-infusion times and “step” deliveries can be programmed to best exploit the characteristics of the ingredients used; it will also be possible to brew beverages at room temperature (for cold soluble products). Finally, the GM 1 system avoids cross-contamination between subsequent drinks.

Management and control of the dispensed beverages

The software allows the management of the dispensed beverages to ensure full control of the GM1. Beverage recharging is performed via software available for the operator and it can be designed specifically for each client.

Software and interface

It is possible to set the washing cycles to ensure standard operation and cleaning of the machine. GM1 is equipped with a system for managing the exhaustion of the water softener. The extremely intuitive touchscreen user interface can be upgraded over time, allowing you to add functions such as the remote control of the machine (for statistics and consumption data), requesting routine maintenance and/or extraordinary repairs and new menus.

Gruppo Gimoka presents a new multi-beverage line, offering a rich quality assortment thanks to a wide range of differently brewed beverages: instant beverages, infusions, drip coffee and Americano.

A comprehensive catalogue of products for the professional segment: high quality ingredients, specific formulas that satisfy the needs of the traditional market, but also capture emerging tastes.  A range that will allow the single location to easily enrich its offer, differentiating itself from that of its competitors’.

Particularly interesting is the range of hot drinks: Orzo, Ginseng Premium, new products such as Ginseng & Matcha, Golden Milk, Zenzero e Limone (Ginger and Lemon); formulas designed to satisfy people who wish to follow a light, healthier diet or those who have a food intolerance. For instance, “Ginseng Premium” does not contain gluten, hydrogenated fats and palm oil, while “Ginseng Free”, besides not containing the above elements, does not contain lactose, GMOs. There is also an extensive catalogue for leaf and herb teas as well as various types of green and black teas – a segment in which consumption has grown considerably over the last years.

This catalogue is the result of the experience that Gruppo Gimoka has acquired over time on various international markets, by developing specific products for the Asian, North American as well as Central and Northern Europe markets, investigating various drinking trends and relevant sensory experiences. 

Versilia Gran Caffè Garibaldi: New Sensory Profile

The blends development laboratory of the Gruppo Gimoka has developed a new sensory profile for the Versilia blend of Gran Caffè Garibaldi. The aim was to make the blend’s aromatic profile more distinctive, unique and characteristic, characterising it by introducing coffee from new countries (Ugandan Arabica and Indonesian Robusta) and at the same time increasing the percentage of Arabica in the blend. The excellent result is a coffee having a high-bodied aroma with hints of milk chocolate, balsamic nuances from the Indonesian coffee and touches of dried yellow fruit (peaches and apricots).

New Gimoka branded Caffitaly* compatible range

At Venditalia 2018, Gimoka’s offer of 5 products (Deciso, Intenso, Cremoso, Vellutato e Soave) is characterised by:

  • the fine tuning of the various blends and the relevant granulometries by Gruppo Gimoka Research and Development laboratory to obtain remarkable quality in the cup;
  • the development of a capsule body that ensures perfect compatibility with the 3 home/professional systems: Caffitaly®*, Caffitaly®* Professional and K-Fee®*;
  • being a barrier capsule and therefore developed to be completely oxygen-free, thus safeguarding aroma over time.
