The selection process to identify the finalists who will take part in the 2019 edition of the FIPGC Cake Designers World Championship and the FIPGC World Trophy of Pastry, Ice Cream and Chocolate organised by the International Pastry, Ice Cream and Chocolate Federation is under way.
And the two-yearly championships will for the third time be held at Host Fiera Milano, on the 19 and 20, and the 21 and 22 October 2019 respectively.
“Selections are taking place around the five continents,” explains Roberto Lestani, President of the International Pastry, Ice Cream and Chocolate Federation, “and will continue through to September 2019.
In the United States, for example, we have four pre-selection stages and a final in November to decide the team that will represent the country at HostMilano. This will be followed by South America with Peru, Brazil and Colombia, and in 2019 it will be the turn of China (in Shanghai) and of Japan, Thailand and finally Australia”.
The theme for both championships this edition is an intriguing one: the Art and National Tradition of the Country of Origin. “We are expecting a lot of flavours and colours: each country taking part will bring something different, and offer their own take on local pastry-making traditions”.
As always the entries will be judged both on their flavour and their aesthetic-artistic aspect.
This edition will also see the much-anticipated return of the Art Gallery, in which members of the federation will make and diplay works of cake design and also of ice cream, in an event that will also be an opportunity for professional development.
Of particular interest on this front is the participation of the next generation of pastry chefs, who will challenge each other in a competition in the same arena as the world’s greatest. “The FIPG Contest School will bring together the best students from around 60 hotel schools around Italy, and they will take part together with a teacher,” Lestani explains.
