HAMBURG, Germany – Efficiency is key in professional kitchens. That is true for small cafés, for restaurants and for big hotel operations. The market for kitchen equipment covers a wide range of needs, supplying a differentiated range of products.
Thus trade visitors to INTERNORGA from 14 to 19 March 2014 can expect an enormous spectrum of the latest developments in kitchen equipment.
“The trend goes from optimised arrangement of kitchen operations, to reduction of consumption levels, to easing staff workload.
Buyers are looking for robust equipment without over-sophisticated features; they want the simplest possible operation, rapid maintenance, and a high degree of functionality,” says Claudia Johannsen, Project Director for INTERNORGA.
The equipment specialist ELOMA is well aware of these requirements, having exhibited regularly in Hamburg for more than 30 years.
“INTERNORGA is a must for us,” says Marketing Manager Sandra Reeh. “This is where we meet not only our partners, trade dealers and planners, but also many final customers and international visitors. The quantity and quality of contacts is what counts.”
Intelligent cooking systems
Show cooking is more in demand than ever before. Many INTERNORGA exhibitors take up the requirements with suitable cooking stations, grills and hotplates, enabling chefs to be mobile and even set up their workplace for show cooking outdoors.
The manufacturers incorporate accelerated cleaning processes to minimise down times; they include optimised heating systems with special control functions to ensure that the food does not stick to equipment during cooking, so there is less cleaning up to do.
Theo Sehrbrock of Küppersbusch Grossküchentechnik GmbH & Co. KG, Gelsenkirchen, announces the new KCI control system, “Küppersbusch CookingIntelligence” – “This system really is intelligent and is highly efficient in operation, structure and performance.”
The KCI Touchpanel enables the chef to control the whole of the cooking process from one interface, at the touch of a finger.
New technologies – cooking “in” the Cloud
Krefft Grossküchentechnik announces LAINOX Naboo, a global innovation in hot-air steamers, opening up a new dimension in cooking with worldwide networking via the Cloud.
“This makes it easy to control all the equipment functions. Anyone who can operate an iPad or smartphone will be able to use this unit intuitively, without extensive training.
It makes food preparation child’s play, because the Naboo Cloud is set in such a way that ingredients, preparation methods and cooking processes are always automatically adjusted precisely to one another,” says a delighted René Eichorn, Managing Director Krefft Grossküchentechnik.
MKN, Wolfenbüttel, a specialist in thermal cooking equipment, puts the focus on optimising all kitchen processes; it presents the new MKN combi steamer FlexiCombi with touch display.
Technologies from everyday life similar to the operation of smartphones are the leading trends. For example the Palux Touch ’n’ Steam series features an intuitive multifunction control unit with high-resolution colour TFT touch screen, for easy operation, user friendliness and functional design.
Optimising potentials for economies
Nowhere in the restaurant and hotel business is more water used than in rinsing and dish washing. So potentials for economies in this area have particularly high impact. HOBART will present their new flight-type dishwashers GENERATION 2014.
They optimise practical operations, save resources, and thus also save money. “One of the main reasons why we use INTERNORGA as a showcase for presentation of our innovations and products is the high quality of trade visitors,” says Manfred Kohler, Sales Director (D/A/CH) of the Offenburg-based warewashing specialist.
And cost efficiency is also the focus in refrigeration. Cool Compact, a manufacturer of commercial refrigerators and an exhibitor at INTERNORGA since 1997, presents a new generation of fast coolers/shock frosters for the first time in 2014, and also new refrigerators and refrigerated counters.
