Leading kitchen equipment manufacturers are constantly working on new functions. The focus of their developments is networking of equipment, thus boosting efficiency and ensuring responsible use of resources, that is energy, chemicals and water. Major players such as Rieber, Hobart and Rational present their latest innovations at Internorga 2019, Europe’s leading trade show for food service and hospitality.
Efficiency at the highest level
In the dishwashing sector, visitors expect innovations that reduce both water consumption and labour. New machines ‘think’ for the user, they analyse quantities of crockery or glassware, and work with variable water pressure control.
“Ease of operation is a key factor,” says Manfred Kohler, Director Sales & Production at Hobart. Hobart is the market leader in professional warewashing and cooperates with other manufacturers to establish standard interfaces for the industry, thus moving forward the Kitchen 4.0 project.
Advances in food preparation put multifunctional equipment with web-based interconnection in the spotlight. They not only relieve the workload of the kitchen team, but also combine the functions of several large appliances in a small space. They reduce the routine workload of chefs, optimise processes, and permit remote access to parameters and settings.
Another benefit of digital technology is optimal tracking of storage and transportation data, together with monitoring of HACCP data.
“Digital applications not only save a tremendous amount of time and staff resources, but also large quantities of paper needed for conventional analogue HACCP documentation,” says Max Maier junior, CEO of the digital and organisation system Check Cloud and Internorga Future Award winner, and exhibitor at Internorga 2019.
