Ten reasons not to miss it.
The International Market
The Market is the beating heart of Terra Madre Salone del Gusto, a meeting place for more than 600 producers from across the world, where visitors discover the extraordinary gastronomic diversity of every continent, first hand, in one place. Our exhibitors are not just merchants, but ambassadors of good, clean and fair food and international Slow Food campaigns; through their tireless work they defend biodiversity, promote ecological-friendly agricultural practices, protect soil fertility, respect animal welfare, reduce the use of synthetic chemicals and reject GMOs. In short, they are living examples of regeneration.
Conferences
Where doctors, authors, philosophers, architects and professors try to define the links between regeneration and the food system, and explore the potential responses to the climate, ecological and social emergencies we face. You, me, us: making a difference together is a conference to explore how citizens of the world can restore value to the food system through their daily choices, feeding the world in a healthy manner and ridding ourselves of a toxic system which thinks exclusively in terms of profit margins. Speakers include Raj Patel, economist and food policy researcher; Rupa Marya, doctor at the University of California and promoter of deep medicine; Michael Moss, author of Salt Sugar Fat: How the food giants hooked us, and Corinna Hawkes, Professor and Director at the Center for Food Policy at City, University of London.
Bread, cereals and flour as symbol of social regeneration
In a space dedicated to Biodiversity our visitors will find a wide range of breads and all the grains used to make them: wheat, cornflour, cassava, rye, bulgur, millet, as well as a range of different tools used to transform them into bread: because diversity is not vegetable varieties and finished products, but the cultures that produce them and conserve them, as well as the tools used to mill, roll and bake. There is a deeper meaning in talking about the products we make from cereals, from bread to couscous, tapioca and injera, insofar as they symbolize the right to food itself. Not everyone has guaranteed access to cereals, and striving to change that is a powerful symbol of social regeneration.
The Educational garden
Slow Food has always had an innovative approach to food and taste education, based on reawakening people’s senses and training them to recognize various aspects of our food, from farm to fork. Together with Turin Botanical Garden, Slow Food is preparing a mandala-shaped vegetable patch which will also be the gateway to the Education Area, as it represents the best place to teach people about food. In this mandala garden visitors can find a synergic garden, an urban garden, a permaculture flower bed, and at the center, an edible food forest.
Terra Madre Kitchen and the Slow Food Coffee Coalition
At the Terra Madre Kitchen visitors can taste dishes from around the world at breakfast, lunch and dinner, prepared by Slow Food Cooks’ Alliance and other chefs, while a special space is dedicated to the Slow Food Coffee Coalition. Next to the Terra Madre Kitchen an interactive space allows people to learn how to salt anchovies, how to make gnocchi, how to ferment vegetables at home, and more.
Taste Workshop: the Latin American Wine Panorama
Taste Workshops are a way to learn through tasting, to widen people’s knowledge while stimulating the senses and listening to the stories of the people behind the products. This Workshop celebrates a fascinating approach to winemaking in Latin America that produces high quality wines through sustainable, organic and biodynamic agriculture, with members of the Slow Wine Coalition, the international network that brings together protagonists from the wine world, united in their passion for good, clean and fair wine.
Activism Area
Advocacy and activism activities have been one of the pillars of Slow Food activity since its beginnings, and the movement is constantly trying to shape public policies and call attention to topics which are now being taken seriously by governments, particularly concerning the link between food production and the environment. In this space, people will be able to discover Slow Food campaigns on topics spanning from pollinators to GMO regulation. Visitors will also be invited to take part in creative workshops organized by the Slow Food Youth Network.
Parco Dora Street Art Tour
The regeneration of the event starts from its location: Parco Dora, a large park beyond Turin’s city center on the site of an old steelworks. It is a powerful symbol for the city and for Terra Madre, showing how ex-industrial areas can be transformed into green spaces, for the good of people and the planet. Parco Dora Street Art is an immersive tour of the murals that adorn the walls of this post-industrial area, which begins at the Sacro Volto church and proceeds through the 400,000 square meters of parkland, passing through where there were Fiat and Michelin factories, industrial facilities which also produced the metalwork of the Mole Antonelliana, Turin’s most recognizable landmark. This is a constantly-evolving street art gallery, where both local and international artists exhibit their work.
Dinner Dates: Women Chefs and the world of Pasta
This Dinner Date is dedicated to the Barbie project by Pastificio Di Martino: part of the proceeds from the sale of Barbie pasta goes to Food for Soul, an international non-profit dedicated to promoting socially-responsible actions that improve the health of our bodies and our planet. Among the chefs present, Cristina Bowerman, the only female chef with 1 Michelin star in Rome.
Coffee in the kitchen
Coffee is not just a drink: it’s a multifunctional ingredient in the kitchen. This workshop will be conducted by a culinary expert at the Lavazza Training Center and visitors can discover the secrets of a complete gastronomic experience starting with the complex coffee blend of iTierra! from Cuba. https://2022.terramadresalonedelgusto.com/en/event/coffee-in-the-kitchen/
