We continue with our puzzle to discover the official coffee machine for the World Barista Championship in Seattle from 9 to 12 April, in the company of past champions.

After the Japanese Hidenori Hizaki, reigning champion, we can re-read what American Michael Phillips said the day after his victory in London, at the World Barista Championship in 2010.

Mr. Phillips, you claimed not to be as extroverted and charismatic as preceding champions, and yet you were among the favorites at the WBC in London, where you won over the rest deservedly. What was the thing that surprised you the most?

I knew that I was going to be up against world class baristas and the success was an experience beyond my expectations. The other competitors were extremely friendly. It is amazing how most of them are available during a World Cup final, and the same with the winners of previous editions. The WBC has proved a close-knit community.

What was the hardest thing during the competition?

Remaining calm and focused. The competition took place in London, where I had never been before and where there were many people in the world of coffee to talk to. I was there to represent the specialty coffee of my country and, having to concentrate on the competition, I felt a great deal of tension.

Was there anything that went better than expected?

In London I was surprised my peace of mind on stage. Although the preparation and planning had been unnerving, in the end I also enjoyed it. Basically I was there to serve a good coffee for the four “people” in front of me.

After winning the title of world champion, Michael Phillips founded Handsome Coffee Roaster in the USA and today is a popular consultant barista.
